Hallmark Hospitality is seeking an experienced Sous Chef to join our established venue in Brisbane’s vibrant suburb of Newstead.
This is a hands-on leadership role suited to a passionate chef who thrives in a fast-paced kitchen, loves working with fresh local produce, and is looking to grow within a dynamic hospitality group.
As Sous Chef, you’ll work closely with the Head Chef to lead day-to-day kitchen operations, mentor junior staff, and deliver high-quality food and service standards.
Support the Head Chef in all aspects of kitchen operations
Assist with menu development, rostering, stock control, and ordering
Lead service periods and maintain high food quality and presentation standards
Train, mentor, and motivate junior kitchen staff
Ensure kitchen cleanliness and compliance with food safety standards
Contribute creative ideas and seasonal menu input
Assist with functions, events, and catering when required
Minimum 2 years’ experience in a Sous Chef or senior kitchen role
Experience in high-volume, fast-paced venues
Strong leadership and communication skills
Solid understanding of stock control, kitchen costing, and operations
Passion for fresh, seasonal ingredients and quality presentation
Ability to perform under pressure and lead by example
Relevant culinary qualifications preferred
