Hallmark Hospitality is seeking an experienced Sous Chef to join our established venue in Brisbane’s vibrant suburb of Newstead.

This is a hands-on leadership role suited to a passionate chef who thrives in a fast-paced kitchen, loves working with fresh local produce, and is looking to grow within a dynamic hospitality group.

As Sous Chef, you’ll work closely with the Head Chef to lead day-to-day kitchen operations, mentor junior staff, and deliver high-quality food and service standards.

About the Role

• Support the Head Chef in all aspects of kitchen operations

• Assist with menu development, rostering, stock control, and ordering

• Lead service periods and maintain high food quality and presentation standards

• Train, mentor, and motivate junior kitchen staff

• Ensure kitchen cleanliness and compliance with food safety standards

• Contribute creative ideas and seasonal menu input

• Assist with functions, events, and catering when required

About You

• Minimum 2 years’ experience in a Sous Chef or senior kitchen role

• Experience in high-volume, fast-paced venues

• Strong leadership and communication skills

• Solid understanding of stock control, kitchen costing, and operations

• Passion for fresh, seasonal ingredients and quality presentation

• Ability to perform under pressure and lead by example

• Relevant culinary qualifications preferred
