HEAD CHEF | THE EDINBURGH CASTLE HOTEL

The Edinburgh Castle Hotel is one of Sydney's most iconic pub venues, combining a vibrant local following with a strong food offering and a reputation for quality. As we continue to grow, we're looking for an exceptional Head Chef to lead our kitchen team and help cement The Edinburgh Castle as a dining destination of choice.

This is an opportunity for a hands-on leader who thrives in a fast-paced pub environment, loves developing people and takes pride in delivering consistently outstanding food at scale.

About the Role

As Head Chef, you will take ownership of all kitchen operations, leading a diverse team while maintaining high standards of food quality, consistency, safety and profitability.

You will be responsible for:

  • Leading and motivating a high-performing kitchen team

  • Managing service across busy lunch, dinner and event periods

  • Delivering high-volume service without compromising quality

  • Recruiting, rostering, training and mentoring kitchen staff

  • Developing, costing and executing menus

  • Managing food costs, stock control and supplier relationships

  • Maintaining compliance with food safety, health and workplace standards

  • Driving kitchen culture, accountability and continuous improvement

What We're Looking For

To be successful in this role, you'll bring:

  • Proven experience as a Head Chef in a high-volume pub

  • Demonstrated success delivering large service periods in condensed timeframes

  • Strong experience managing high-volume event days and functions

  • Experience using Deputy for rostering and workforce management

  • Experience recruiting, developing and leading kitchen teams

  • Strong menu development and menu costing skills

  • Excellent leadership and delegation skills

  • Experience leading multicultural teams

  • Sound computer literacy and administrative skills

  • Experience using Lightyear for invoice processing

  • Thorough understanding of food safety, WHS and compliance requirements

  • Relevant culinary qualifications or equivalent industry experience
