Chef job responsibilities include, but are not limited to:
Assist the Head Chef to coordinate, direct and control as well as produce quality food for all outlets to the standards.
Operate within the guidelines set by the state for food handling.
Discuss food preparation issues with the team
Deputize for the Head Chef in their absence, maintaining standards and productivity, liaise with the floor supervisors to ensure smooth and prompt service.
Ensure consistency and highest quality in the taste, presentation and appropriate food temperature for food served in all kitchens.
Ensure the quality and cleanliness of all food displays.
Check stores and refrigerators and be responsible for the proper storing and recycling of leftovers.
Food cost in line with budget
Assist in the creation of new menu items.
Develop standard recipes and costing.
Order kitchen supplies as required.
Keep a close control of food wastage and spoilage, maintain a close eye on portion size and assist with food cost control.
Food supplied is of quality standard.
Ensure compliance with HACCP guidelines set by Council and venue standards.
Maintain cleaning schedules.
Ensure the establishment meets health and safety compliance regulations.
The successful candidate will be able to display:
Experience working in a large pub/bistro style kitchen
Positive attitude, strong communication skills, and motivated work ethic
Ability to understand and comply with internal food policies and procedures and consistently meet expected food quality standards
Understanding of best practice in food and handling requirements
Necessary certificates and qualifications
Cert IV in Commercial Cookery or higher
