This is a replacement role at Omnia, our modern European bistro on the ground floor of Capitol Grand, South Yarra. You will own your section, lead the junior team behind you, and deliver service to the standard this kitchen is known for.

Led by Executive Culinary Director, Stephen Nairn, our portfolio includes award-winning Omnia, Yugen Dining and Yugen Omakase. In addition to The Grand Room and Bromley Gallery Events, all located within the prestigious Capitol Grand, on the bustling corner of Toorak Road and Chapel Street, South Yarra and Portside.
  
The Role

You own your section. The preparation, the service, the standard - all of it.

• Manage day-to-day section operations and supervise Commis and Demi Chefs
• Plan and execute mise en place for smooth, consistent service
• Prepare, cook and plate dishes to Omnia's standard - every cover
• Monitor stock, check deliveries and assist with ordering
• Train and mentor junior chefs in technique and kitchen standards
• Maintain food safety and hygiene to HACCP and FIFO requirements
• Follow and uphold cleaning schedules consistently

Tuesday to Saturday. Based at Capitol Grand, South Yarra.
  
Who We're Looking For

You are a cook who takes genuine pride in what comes off your section. You hold the standard because it matters to you - not because someone is watching.

• Experience as a Chef De Partie in a fine dining restaurant 
• Strong section management and kitchen operations knowledge
• Team leadership and ability to mentor junior chefs
• In-depth knowledge of food safety, HACCP and FIFO
• Valid working rights in Australia - sponsorship not available

And the non-negotiables - you show up prepared, you execute with consistency, and you take ownership of your section without needing to be directed. The guest never sees what happens behind the pass. You know that. And you care about it anyway.
