The Role
As our full-time Sushi Chef, you'll be the engine of the kitchen. You'll run morning prep, roll continuously through peak hours, and keep our production tight, efficient, and adaptable as we learn what our customers love. You'll also contribute to menu development, including ongoing specials and new roll ideas that align with our modern, Melbourne-cool brand.
This is primarily a solo kitchen role (with support from a kitchen hand during prep hours), so it suits someone confident, independent, and comfortable taking ownership of the kitchen day-to-day.
What You'll Do
Lead daily prep: rice, proteins, veg, toppings, display rolls
Roll sushi with speed, consistency, and precision during peak service
Help finalise the core menu and contribute ongoing specials and new roll ideas
Manage daily production planning, adjusting based on sales patterns and customer demand
Place ingredient orders and maintain stock levels (owner manages supplier relationships)
Track wastage, yield, and portion control
Maintain a clean, organised, food-safe kitchen
Work independently with minimal supervision
Uphold Sooshy's modern, urban brand through presentation and quality
What You Bring
2+ years' experience as a Sushi Chef or in a Japanese kitchen
Strong knife skills and high-volume ability
Confidence in rice cooking, portion control, and prep systems
Ability to work fast without compromising quality
A calm, systematic approach especially during the lunch rush
Creativity within a simple, modern menu framework
Reliability, independence, and pride in consistency
Understanding of food safety and hygiene standards
Must have current Australian work rights with no sponsorship required

Salary
Above the Hospitality Industry (General) Award (Level 4), based on experience.
