Mons. O’Shea is a charming Irish pub and shop in the heart of Fremantle, WA. This cosy local spot is known for its live music, warm hospitality, and a great selection of drinks and hearty meals. Alongside the pub, our retail space offers a curated range of Irish merchandise, gifts, and specialty foods.
We’re looking for a highly experienced Head Chef or strong Sous Chef with a proven background in elevated pub classics, with Irish & English influence to lead our food offering.
This is a hands-on leadership position where you’ll take ownership of the kitchen while working closely with the owners to shape the direction of the menu and overall food experience.
You’ll lead and support the kitchen team to ensure seamless service, manage supplier relationships, and oversee stock levels. You’ll also play a key role in refining kitchen operations and fostering a positive, high-performing team culture.
Proven experience as a Head Chef or Sous Chef ready to take the next step.
Background in busy pub or bistro kitchens with a passion for Irish/English style-cooking.
Strong leadership skills with a hands-on approach
Solid understanding of stock control, ordering, and supplier management
Passion for menu development and high-quality, consistent food
Calm, organised and the ability to thrive in a fast-paced, service-driven environment
A collaborative mindset and commitment to building a positive team culture
A positive attitude and commitment to maintaining high standards
Desire to mentor and develop junior team members
Genuine creative input into menu and food direction
Close collaboration with engaged owners
