We are seeking an exceptional Head Chef to lead our kitchen team and continue driving culinary excellence, consistency, and innovation.
This is a hands-on leadership role for a chef who thrives in a fast-paced, high-volume premium dining environment. You will oversee all kitchen operations, mentor and develop a talented team, and work closely with senior management to maintain the standards that have made Clam Bar one of Sydney's most sought-after restaurants.
Lead, inspire and develop a high-performing kitchen team
Drive consistency, quality and execution across all services
Manage food costs, labour costs and kitchen budgets
Maintain best-practice food safety and WHS standards
Oversee ordering, stock control and supplier relationships
Recruit, train and develop chefs at all levels
Contribute to menu development
Work collaboratively with restaurant management to deliver exceptional guest experiences
Maintain a positive, professional and high-performance kitchen culture
To be successful in this role you will have:
Proven experience as a Head Chef or Senior Sous Chef in a premium restaurant environment
Strong leadership and team development skills
Experience managing high-volume service without compromising quality
Excellent knowledge of seafood, grill and premium produce-driven cooking
Strong financial acumen including food cost and labour management
Exceptional organisational and communication skills
A calm, solutions-focused approach under pressure
A passion for hospitality and creating memorable dining experiences
