Fancy Hank’s Group is looking for an experienced Sous Chef to join our kitchen leadership team across our Melbourne venues.
We’re looking for a chef ready to take the next step in their career within a growing multi-venue hospitality group.
This is a fast-paced, high-volume role working across restaurant service, functions, canapes, and BBQ/smoker-focused cooking. The role suits a chef who enjoys leading from the front, thrives under pressure, and takes pride in running strong services and developing teams.
Our kitchen has been heavily invested in over recent years, creating a large and highly functional workspace with strong workflow, dedicated prep areas, smoker setup, and equipment designed for high-volume service.

About the Role
As Sous Chef, you will:
Run pass and lead kitchen services
Support day-to-day kitchen operations
Lead and manage prep teams
Train and develop junior chefs
Assist with ordering, stock control, and kitchen organisation
Maintain strong food quality, consistency, and presentation
Support menu execution and service flow
Maintain high standards of cleanliness, hygiene, and food safety
What We’re Looking For
Minimum 2 years experience as a Sous Chef in a fast-paced kitchen
Experience leading medium to large kitchen teams
Certificate III or IV in Commercial Cookery
Strong leadership and communication skills
A hands-on approach and strong work ethic
Confidence running high-volume services
Passion for cooking and developing kitchen teams
American BBQ or smoker experience preferred but not essential
Full Australian working rights
Ability to provide employment references
