The Role

The role is to deliver an end product that is fresh, simple and clean in flavour, always striving to exceed our customers’ culinary and service expectations. It requires full adherence to Food Safety Regulations and the standards set by Amora, ensuring consistency and excellence in every aspect of our operation. A key focus is fostering a professional, personable and dedicated team environment where collaboration and respect are central. The position also requires efficient, reliable and profit‑focused work practices that align with our corporate identity and support the overall success of the hotel.

Key Responsibilities

  • Maintain high culinary standards by producing dishes that meet required specifications, presentations and quality expectations, using only fresh, properly stored ingredients

  • Uphold all Food Safety, hygiene, fire and safety regulations, ensuring full compliance with company, hotel and departmental policies and procedures

  • Work productively and flexibly across all kitchen sections, adapting to business needs, supporting team members and assisting with general food production when required

  • Ensure equipment and work areas are clean, well‑maintained and efficiently operated, minimising breakage and maintaining a safe, organised environment

  • Communicate effectively and professionally, maintaining strong working relationships, attending team meetings and seeking guidance from supervisors when unsure

  • Support team morale and operational consistency by following hotel guidelines, responding to departmental changes and carrying out additional duties assigned by senior chefs

Skills and Experience

  • Holds valid working rights in Australia, with strong communication skills and alignment with Amora values

  • Qualified Chef with completed Commercial Cookery apprenticeship (or equivalent) or working towards a Certificate IV in commercial cookery (or equivalent)

  • Experience as Commis Chef in a similar kitchen role, with basic knife skills and knowledge of food handling and hygiene

  • Demonstrates professionalism and high personal presentation, with the ability to work under pressure in a fast‑paced environment

  • Shows genuine interest in food, wine and industry trends, with a conscientious attitude and a desire to grow and succeed

  • Collaborative team player with proven teamwork skills and the ability to adapt to a 5‑star kitchen environment when required

  • Previous experience in a 5-star kitchen environment
