We have a rare opening to join our executive culinary team as the Executive Sous Chef, Under the direction of the Executive Chef and within the limits of established Intercontinental Hotels Group Policies and Procedures, assists in the direction of all aspects of the Food Production and Stewarding operations
DAY TO DAY
Assist the Executive Chef to manage all functions of the Food Production and Stewarding
Assist the Executive Chef control stocks of all food, material and equipment
Follows set standards of all food and equipment purchases in accordance with IHG guideline
Monitors local competitors and compare their operation with the hotel Food and Beverage operation
Ensuring that all food stock levels within food preparation areas are of sufficient quantity and quality in relevance to the hotel occupancy and function forecasts
Assist the Executive Chef to prepare work schedules and annual leave schedules within budget, business expectations and guidelines of the appropriate industrial legislation
DUTIES INCLUDE
Works with Executive Chef to ensure the departmental performance of staff is productive.
Assists in recruiting in line with company guidelines
Assist to prepares detailed orientation program for new staff
Ensures training needs analysis of Kitchen staff are carried out and training programs are designed and implemented to meet needs
Manage, counsels and disciplines staff, providing constructive feedback to enhance performance
Assists in developing work efficient rosters in line with local labour codes Attends weekly & monthly meetings
WHAT WE NEED FROM YOU
Full working rights in Australia without restrictions (a kind reminder that sponsorship is not available for this role)
At least one year in a supervisory capacity, or equivalent combination of education and culinary/kitchen operations experience
5 years' experience as a chef
Degree or certificate in culinary arts
Mandatory certifications include Food and Safety Certificate
Passion for providing luxury experiences, not shy to go above and beyond to personalise our Guests stay and provide your local wisdom to enhance their experience
Ongoing availability to work flexibly as rostered, including nights, weekends and public holidays
Impeccable grooming standards and good personal hygiene
An organised approach, ability to handle large amounts of information at once and deal with various requests simultaneously
Good communication and writing skills.
Physical fitness as you’ll be on your feet most of the day. Sometimes you’ll need to lift, push and pull objects, such as tables, up to 23 kg – we have the equipment to support you and keep you safe.
