Plan and organize the preparation and cooking of foods for dine in, take away and catering.
Your main responsibilities are as follows:
• Plan and execute menus in line with Indonesian authentic taste and requirements.
• Estimate food and labour costs, including organise the order of ingredients based on daily preparation lists and stock levels in the cool room
• Oversee the quality and consistency of dishes at every stage, from preparation (cutting, marinating), cooking and presentation.
• Demonstrate and supervise kitchen staff on specific cooking techniques such as sambal preparation, skewering meats, marinating processes, and correct grilling and simmering methods
• Prepare and cook menu items, including rice, sambal, marinated meats, skewers, vegetables, and Indonesian specialties like Siomay, Bakso, etc.
• Ensure all food safety and hygiene regulations are followed by all kitchen team members, including hand washing, sanitising workstations, safe food storage, and proper cleaning during both opening and closing procedures
• Supervise kitchen setup and service readiness, including turning on equipment, organising utensils, preparing miseen place, and ensuring service stations are fully stocked
• Ensure all kitchen tools and equipments are being utilized and maintained properly
• Maintain workflow efficiency by coordinating preparation tasks (e.g. batch cooking rice, cutting proteins, portioning ingredients) to ensure smooth service periods
• Conduct kitchen staff training by designing workflow routines, preparation standards, and correct use of kitchen equipment and cleaning procedures
• Manage food storage and preservation, including portioning, refrigerating in the cool room, and safely storing leftover ingredients after service
• Oversee closing procedures, ensuring all cleaning tasks are completed (appliances, floors, utensils), waste is disposed of properly, and the kitchen is reset for the next shift
• Discuss food-related issues with Restaurant Owner where required
• Perform other related duties as required by management.
