Full-Time Chef / Sous Chef

We are seeking an experienced and motivated Full-Time Chef to join our team. This is a hands-on role that combines high-quality food preparation with stock control, customer service, some leadership responsibilities, and venue operations.

About the Role

The successful applicant will be responsible for delivering exceptional food quality while maintaining a safe, clean, and compliant kitchen environment. This position also includes customer-facing responsibilities and assisting with general venue operations.

Key Responsibilities

  • Prepare, cook, and present high-quality meals in accordance with menu specifications.

  • Maintain consistent food quality, portion control, and presentation standards.

  • Ensure the kitchen is maintained to the highest standards of cleanliness and hygiene.

  • Ensure full compliance with all ACT Health Regulations, food safety standards, and workplace health and safety requirements.

  • Manage stock levels and place orders with suppliers as required.

  • Receive, check, and rotate stock to minimise waste and maintain product quality.

  • Supervise, train, and direct kitchen and service staff where required as well as manage the kitchen in the absence of the head chef

  • Assist with rostering and daily operational planning.

  • Provide excellent customer service, including serving beverages, operating POS system, engaging with members, making coffee and running meals to tables when necessary 

  • Work collaboratively with management to improve menu offerings and operational efficiency.

  • Ensure all kitchen equipment is properly maintained and reported if repairs are required.

Skills & Experience

  • Qualified Chef with relevant industry experience. (Minimum certificate 3)

  • Strong knowledge of food safety, HACCP principles, and ACT health regulations.

  • Experience managing stock ordering 

  • Leadership experience with the ability to supervise and motivate staff.

  • Excellent organisational and time-management skills.

  • Ability to work independently and as part of a team.

  • Responsible Service of Alcohol (RSA) certification, or willingness to obtain.

  • Responsible Conduct of Gambling (RCG) certification, or willingness to obtain.

  • Flexibility to work evenings, weekends, and public holidays as required.
