The opportunity

Delaware North Australia is seeking a full-time Chef de Cuisine with Asian specialty experience to join our team at Mindil Beach Casino Resort in Darwin. In this role, you will lead a fast-paced kitchen, bringing authentic flavours, modern techniques, and creative flair to a diverse and vibrant dining environment.

What will you do?

• Design and evolve menus that showcase authentic Asian flavours while incorporating modern techniques and current dining trends
• Provide hands-on leadership, mentoring and training to build a skilled, high-performing kitchen team
• Maintain exceptional food quality and presentation through strong systems, processes and attention to detail
• Monitor food costs, budgets and operational efficiency using kitchen systems to support profitability
• Oversee labour planning and performance management for both permanent and casual team members
• Champion food safety standards and HACCP compliance across all kitchen operations

More about you

• Proven experience leading large-scale kitchen operations, ideally within high-volume Asian cuisine
• Background in premium dining and/or large-scale functions, with experience in hatted or high-end venues highly regarded
• Demonstrated ability to lead, develop and inspire diverse culinary teams
• Strong expertise in Asian menu development, alongside stock control and cost management
• Commercially driven, with a track record of delivering operational and financial outcomes
• Relevant culinary qualifications, with a focus or exposure to Asian cuisine preferred
• Confidence using kitchen and business systems, including stock control platforms, spreadsheets and reporting tools
