Cisne is a vibrant and growing café located in the heart of Cooma, New South Wales, approximately 90 minutes from Canberra. We are known for our modern Australian café menu with Asian influences and our commitment to fresh, locally sourced ingredients and exceptional customer service.
We are seeking a skilled and motivated Cook to join our team. The successful applicant will have experience preparing modern Australian café-style dishes and Asian-inspired cuisine and will play an important role in maintaining our food quality standards and daily kitchen operations.
Key Responsibilities
• Prepare, cook and present a variety of high-quality breakfast, lunch and café menu items.
• Undertake quantity cooking while maintaining consistency, quality and presentation standards.
• Prepare ingredients, including washing, cutting, marinating and portioning food items.
• Season and cook food in accordance with recipes and menu specifications.
• Assist in the preparation of entrées, main courses, desserts and daily specials.
• Monitor and regulate the operation of ovens, grills, fryers, broilers and other kitchen equipment.
• Ensure food is stored, handled and rotated in accordance with food safety and hygiene requirements.
• Inspect food preparation and service areas to maintain a safe, clean and hygienic kitchen environment.
• Promptly report maintenance issues, equipment faults or unsafe conditions to the Chef.
• Assist with stock control, inventory management and ordering of food supplies.
• Minimise food wastage through effective stock rotation and storage practices.
• Work with the Chef to develop menu items featuring modern Australian cuisine with Asian influences and an emphasis on fresh local produce.
• Participate in regular kitchen cleaning duties, including scheduled deep-cleaning tasks and equipment maintenance.
• Comply with all workplace health and safety, food safety and sanitation requirements.

Skills and Attributes
• Demonstrated experience preparing Asian cuisine and modern Australian café-style food.
• Sound knowledge of food preparation, cooking techniques and presentation standards.
• Strong understanding of food safety, hygiene and sanitation requirements.
• Excellent attention to detail and commitment to quality.
• Strong organisational and time-management skills.
• Ability to work effectively in a fast-paced commercial kitchen environment.
• Ability to work independently and as part of a team.
• Understanding of stock control and inventory management.
• Creative approach to food preparation and menu development.
Qualifications and Experience
• Certificate III in Commercial Cookery or equivalent qualification.
• Minimum of one year of full-time experience as a Cook in a commercial kitchen.
• Experience preparing both Asian-inspired and Western café-style cuisine is highly desirable.
• Experience working in a busy café or restaurant environment will be highly regarded.
