Vic’s Meat is seeking an experienced and qualified butcher to join our team at our Mascot facility.

This role is primarily focused on production butchery, working Tuesday to Friday preparing premium products to precise online and wholesale specifications. On Saturdays, you will be the Lead Butcher for our Market Day operation, working with customers and representing one of Australia's most respected premium meat brands.

Key Responsibilities

Tuesday – Friday: Production Butchery in Mascot

  • Boning and breaking down beef, lamb and pork primals

  • Portion cutting products to online and wholesale specifications

  • Preparing customer orders with a high level of accuracy and consistency

  • Maintaining yield performance and portion control standards

  • Trimming, preparing, packing and labelling products to specification

  • Working to daily production schedules and volume targets

  • Minimising waste and maximising yield recovery

  • Maintaining HACCP, Quality Assurance and WH&S standards

Saturday: Market Day Lead Butcher in Mascot

  • Working as the Lead Butcher during Market Day trade

  • Setting up and packing down displays

  • Serving customers and providing product knowledge

  • Custom cutting products as required

  • Maintaining presentation and stock levels throughout the day

  • Delivering exceptional customer service

About You

  • Qualified butcher with proven industry experience

  • Strong boning, primal breakdown and portion control skills

  • Experience working to detailed wholesale and production specifications

  • Excellent knife skills and attention to detail

  • Strong understanding of yield management and product quality

  • Reliable, hardworking and team-focused

  • Takes pride in craftsmanship and producing premium products
